			<content:encoded><![CDATA[<p>Here is yet another recipe for everyone&#8217;s favorite Italian chicken dish!  Savory herbs are included in the ingredients for this one, which gives it an extra kick for your taste buds!</p>
<p>1 lb chicken cutlets, pounded very thin<br />
2 large onions, minced<br />
3 garlic cloves, minced<br />
6 Tbsp olive oil, divided in half<br />
2 cans (16-oz each) crushed tomatoes<br />
1 tsp salt<br />
1/2 tsp freshly ground black pepper<br />
1 can (8-oz) tomato sauce<br />
1 can (6-oz) tomato paste<br />
2 Tbsp oregano<br />
2 Tbsp basil<br />
1 tsp fennel seeds<br />
1/4 cup dried breadcrumbs<br />
1 1/4 cups Parmesan cheese<br />
1 egg, beaten<br />
1/2 pound mozzarella cheese</p>
<p>1.  Preheat oven to 375 degrees.  Cut the meat into servings and set aside.</p>
<p>2.  Cook onions and garlic in 3 tablespoons of the olive oil for about 5 minutes.  Add tomatoes, salt and pepper to the pan.  Simmer for about 5 minutes longer.  Add tomato sauce, tomato paste and herbs.  Cover and simmer for 20 minutes.</p>
<p>3.  Combine breadcrumbs and Parmesan cheese in small bowl.  Dip the meat into the egg, then coat with crumb mixture.  Use remaining olive oil to brown in a skillet.  Transfer to shallow baking dish.  Pour 2/3 of the sauce over chicken and top with mozzarella generously.  Top with remaining sauce.  Top with some freshly grated Parmesan and bake for 30 minutes.</p>
<p>4.  Serve over your favorite pasta, cooked according to package directions.</p>
<p>TIPS:  Add a salad and your favorite Italian bread for a complete, delicious meal!</p>

<p>2 cups Prego Traditional Italian Sauce<br />
4 fully cooked breaded chicken cutlets<br />
4 thin slices cooked ham<br />
1 cup scredded mozzarella cheese<br />
2 Tbsp grated Parmesan cheese</p>
<p>1.  Spread 1 cup of sauce in an 11 X 8 casserole (2-quart)</p>
<p>2.  Place the chicken over the sauce.  Spoon 1/4 cup sauce over each cutlet.  Top with 1 slice rolled ham and 1/4 cup mozzarella.  Sprinkle with Parmesan.</p>
<p>3.  Bake at 425 degrees for about 10 minutes, until cheese melts and sauce is bubbly.</p>
<p>Tips:  Serve with your favorite pasta or quick-cook rice and Italian bread.</p>
