Chicken Herb Parmesan Recipe

1 lb chicken cutlets, pounded very thin
2 large onions, minced
3 garlic cloves, minced
6 Tbsp olive oil, divided in half
2 cans (16-oz each) crushed tomatoes
1 tsp salt
1/2 tsp freshly ground black pepper
1 can (8-oz) tomato sauce
1 can (6-oz) tomato paste
2 Tbsp oregano
2 Tbsp basil
1 tsp fennel seeds
1/4 cup dried breadcrumbs
1 1/4 cups Parmesan cheese
1 egg, beaten
1/2 pound mozzarella cheese
1. Preheat oven to 375 degrees. Cut the meat into servings and set aside.
2. Cook onions and garlic in 3 tablespoons of the olive oil for about 5 minutes. Add tomatoes, salt and pepper to the pan. Simmer for about 5 minutes longer. Add tomato sauce, tomato paste and herbs. Cover and simmer for 20 minutes.
3. Combine breadcrumbs and Parmesan cheese in small bowl. Dip the meat into the egg, then coat with crumb mixture. Use remaining olive oil to brown in a skillet. Transfer to shallow baking dish. Pour 2/3 of the sauce over chicken and top with mozzarella generously. Top with remaining sauce. Top with some freshly grated Parmesan and bake for 30 minutes.
4. Serve over your favorite pasta, cooked according to package directions.
